Plant Based Chocolate Ganache Ice Cream (IQFA Foodservice Product of the Year)
Our chocolate ganache is inspired by a small family run gelatoria in Florence, Italy. Using 64.5% couverture dark chocolate which provides a beautiful balance of bitter and sweet with a mild cocoa flavour, we paired this with alkalised 22% fat cocoa powder. Once the ganache is made, it is added to the ice cream base. Our premium plant based ice cream is then churned with a little over churn to allow a dense, creamy and flavourful ice cream with every spoonful. Also gluten free and nut free.
Plant Based Vanilla Irish Sea Salt Ice Cream (IQFA Silver)
Our vanilla Irish Sea salt ice cream is made by using organic Papua New Guinea vanilla beans. Dae work directly with farmers on the ground to ensure products are ethnically sourced and that farmers get a fair pay for their crop and that the pods are of the highest standard. Once vanilla is received it is deseeded from the beans and a vanilla paste is made which is used in the ice cream base. The beans are then dried and cured with white sugar to make vanilla sugar. Lastly, the base is then salted using Achill Island sea salt. Our premium plant based ice cream is then churned with a little over churn to allow a dense, creamy and flavourful ice cream with every spoonful. Also gluten free and nut free.
Williams’s Gate Short Rib of Beef (IQFA Silver)
Our short ribs are a true masterpiece, hand-selected and expertly cut from the flavourful beef chuck. These magnificent cuts of meat boast a perfect balance of marbled meat and fat, ensuring the most tender and succulent meat possible. Our master butchers are passionate about their craft and take great care to remove any excess fat and silver skin, ensuring even cooking and optimal tenderness. Slow braising these short ribs unlocks their full potential, creating a truly unforgettable dining experience.
Williams’s Gate Irish Pork Tomahawk Steak 2pk 640g (IQFA Bronze)
With the French Trimmed rib bone exposed, leading into our hand selected magnificent Irish pork steak giving a unique and awe-inspiring presentation. A thin layer of fat which renders down and enhances the sweet flavour and juiciness. The rich pink colour just screams tenderness. To cook, simply season lightly, grill or pan sear. The beautifully caramelised crust locks in the juices, just savour that flavour.
